My Favorite Healthy and Delicious Vegan Mac & Cheese Recipe

The other day I was jonesin’ for some cheesy, creamy, delicious mac, and I decided to take the healthy route and incorporate veggies in the sauce for a truly guilt-free version. The recipe is oil-free and chock full of nutrients. Even my kiddos are huge fans, and they have no idea they’re eating potatoes, carrots, and cashews!

Ingredients:

  • 2 2/3 cups macaroni
  • 1 cup peeled & diced potatoes
  • 1/4 cup peeled & diced carrots
  • 1/3 cup chopped onion
  • 1/2 cup raw, pre-soaked cashews
  • 1 cup coconut milk
  • 2 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • 1/4 tsp garlic powder
  • salt and pepper to taste
  • pinch of paprika

Directions:

  • Cook macaroni, drain, and set aside
  • Boil chopped potatoes, carrots, and onion for ~10 minutes or until vegetables are soft enough to blend
  • Blend veggies along with remaining ingredients until smooth
  • Pour sauce over macaroni and enjoy!
