Yummy Baked Vegan Donuts [RECIPE]

I’ve had this one donut pan chillin’ in my Amazon cart for a couple weeks (why was I sitting on this? no clue), and I finally clickity-clacked “proceeded to checkout” on impulse a few days ago (I know, I’m wild af) along with a bunch of other crap I prolly don’t need. Anyhoo, the day after it arrived, I made my very first batch of donuts evah… and not to toot my own horn, but sort of kind of, ok yes—they were the sh*t.

As much as I adore donuts in all of their sugary glory, I always cringe when I think about the deep fry-y factor. Like, if I can save some calories by making them a bit lighter, I can eat twice the amount of donuts. Btw, this is the extent of my mathematical computing skills, lol.

So needless to say, the first batch of donuts that I made were baked and not fried… and like I said earlier – they were BOMB.com. Enough blah-blahing, let’s get to the recipe!

Yummy Baked Vegan Donuts

What you’ll need:

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup non-dairy milk (I opted for vanilla soy milk)
  • 1/4 cup melted Earth Balance
  • 2 tbsp apple sauce
  • 1 1/2 tsp baking powder
  • 1/2 tsp apple cider vinegar
  • 1/2 tsp vanilla extract
  • 1/4 tsp pumpkin pie seasoning (or a bit of nutmeg and cinnamon)
  • dash of salt

For icing:

Preheat the oven to 350ºF. Combine and mix dry ingredients. In a separate bowl combine and mix wet ingredients. Now let your dry and wet ingredients intermingle and party down a.k.a. thoroughly mix that ish up, yo! Spoon the dough into your nonstick donut pan and and bake for 12-14 mins.

For the icing, simply mix the ingredients together in a bowl and dunk each donut in there upside down until it’s fully coated. Add sprinkles or whatever toppings your heart desires, and get your nom-nom on!

Makes 6 donuts.
