Vegan Refined Sugar-Free Banana Bread [RECIPE]

Here at Camp Cuddlebear/VBR Headquarters, hubs and I are pretty notorious for always letting our bananas get hella ripe past the point of enjoyability…. honestly, as soon as those lil’ brown spots start to appear, I lose all interest in eating them raw. Instead of chucking them, I like to either freeze them to make banana “nice” cream or mash ’em up for some nanner bread. Since I’ve been on somewhat of a health kick lately, I’ve really been diggin’ this recipe for vegan refined sugar-free banana bread. It’s naturally sweet, moist, and totally delish!

Vegan Refined Sugar-Free Banana Bread

  • 1/3 cup melted coconut oil
  • 1/2 cup maple syrup
  • 1/4 cup non-dairy milk
  • Ener-G Egg Replacer equal to 2 eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups mashed mega ripe bananas
  • 1 3/4 cups flour
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon or pumpkin pie spice
  • pinch of salt

Toppings (optional):

  • Crushed walnuts
  • Uncooked oatmeal
  • Coconut sugar, date sugar, or unrefined sweetener of choice

Preheat oven to 325°F. In a large bowl, whisk together coconut oil, maple syrup, non-dairy milk, and vanilla extract until smooth. In a separate small dish, whip up your egg replacer according to the directions on the box, and then whisk that, along with your mashed bananas, into your wet mixture. It’s ok if it’s a lil’ lumpy. In a separate mixing bowl, whisk together your dry ingredients (flour, baking soda, salt, and cinnamon). Combine wet and dry ingredients and mix well.

Grease a 9 x 5-inch bread pan with cooking spray, and pour the batter in. Bake for ~55 minutes, or until it passes the toothpick test. Remove from the oven, and let cool before serving.
