Gluten-Free & Oil-Free Vegan Pancakes {RECIPE}

Every weekend, my family celebrates Syrup Saturday (sometimes Syrup Sunday, too), and my go-to recipe for literally the BEST pancakes in the galaxy (they’re hella easy, too) is right here. Since I’ve been on my health kick (past 2 months I have seriously cut down on oil, sugar, gluten, calories, you name it), I made it my mission to find a healthier pancake recipe so that I didn’t miss out on sweet weekend breakfast noms. So, ladies and germs, here ya have it!

Healthy-Ass Vegan Pancakes (Gluten-Free, Oil-Free and Easily Refined Sugar-Free)

  • 1 cup gluten-free flour
  • 2 tbsp baking powder
  • 2 cup vanilla almond milk
  • 2 tbsp unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 teaspoon apple cider vinegar
  • 2 packets of stevia
  • pinch salt

Makes 6-8 smallish pancakes.

Mix dry ingredients. In a separate bowl mix wet ingredients. Combine all ingredients and mix well. Cook in a non-stick pan over medium-high heat until pancakes brown on each side. Slather your finished yummies with maple syrup, fruit spread, berries – whatever your heart desires! I personally topped these bad boys with maple syrup and a bit of So Delicious light Coconut Whip (and a few heart sprinkles), and dannnnng – heaven! Getcho nom on and enjoy! Sharing is optional but not recommended. ?
