5-Ingredient Vegan Peppermint Patties [RECIPE]

Lately I’ve been CRAVING (like intensely and hormonally) peppermint patties… you know, the evil kind at checkout stands in conventional supermarkets that are def not vegan. WOMP. So I took matters into my own hands (hey, when a woman needs her sugar fix, she’s gonna get it!), and I done did make my own! These are not only vegan, but they’re also refined sugar-free, gluten-free, cholesterol-free, and eeeeeeeeasy to whip up.

5-Ingredient Vegan Peppermint Patties:

  • 1 cup shredded unsweetened coconut
  • 2.5 tsp. maple syrup
  • 2 tsp. coconut oil
  • 1 tsp. peppermint extract
  • vegan sugar-free chocolate chips (Lily’s is my brand of choice)

Blend all of your ingredients in a food processor or blender on high speed. Form about 6-8 little patties with your mixture and lay them on a plate lined with wax paper. Place in freezer for 25 mins. Melt chocolate chips in a double broiler or microwave until completely melted (patience, fools! … mainly addressing myself as I’m always antsy, especially when it comes to desserts). With a fork, dip patties into the melted chocolate until fully coated. Place patties back on wax paper, and set them in the freezer for another 10-15 minutes. Now eat ’em up and enjoy – feel free to save me some! 😉 xoxo
