The Easiest Vegan Pancake Recipe Ever

Kick breakfast up a notch (or two) with this easy-peasy, ridiculously simple, scrumdiddlyumptious recipe for fluffy vegan pancakes!

Ingredients:

  • 1 1/4 cups flour
  • 2 tbsp sugar (can sub xylitol for a sugar-free option)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cups non-dairy milk (can sub water)
  • 1 tbsp Earth Balance (can sub coconut or vegetable oil)

Mix dry ingredients. In a separate bowl mix wet ingredients. Combine all ingredients and mix well. Cook in a non-stick pan over medium-high heat until pancakes brown on each side. Feel free to rock some adorable cookie cutters (like the moosey one I used in the pic above) to make your flapjacks extra hella cute. Slather your finished yummies with Earth Balance or coconut oil and a sh*t ton of maple syrup (and then some). Getcho nom on and enjoy! Sharing is optional but not recommended. 😉

Makes~6 pancakes.
