I am obsessed with tofu scrambles! I could eat them all day every day for the rest of my life. I love that they’re hella yummy, satisfying, versatile, and are packed full of protein. I’ve had many a scramble, both at home and at restaurants, but I gotta admit, this one I came up with the other day is the BEST (*toot-toot* – that’s my horn!) 😉
This scramble is suuuuper easy to whip up, and the best part is that you you add whatever or swap things out! Have fun with it!
What you’ll need:
- 1 Tbsp olive oil
- 1 packet of Fantastic World Foods Tofu Scrambler seasoning
- 1 14 oz. package of extra firm tofu, crumbled
- 3 tbsp. of Soyrizo
- 1/4 cup of chopped onions
- 10 cherry tomatoes
- 1 small can of olives,
- 1 small handful of fresh, chopped mushrooms
- 1 small handful of spinach (fresh or frozen)
- Smoked paprika to taste
- Daiya vegan cheese shreds to taste
- Sliced avocado to top it off
Sauté your veggies in light oil (best order: onions, mushrooms, spinach, tomatoes, olives, soyrizo, Daiya cheese). In a separate pan, crumble your extra firm tofu by mashing it with a fork. Add the packet of Fantastic World Foods Tofu Scrambler seasoning and mix well. Add 1 tbsp. vegetable oil and fry the tofu on medium heat for ~3 minutes with occasional turning. Combine the veggies with your seasoned tofu, serve and enjoy!
