Elmo fruit tray

My lil’ muffin turned two earlier this month (ack, where does the time go?!), and we had a huge Elmo-themed b-day bash because Elmo is a total rockstar at our house. šŸ˜‰ I made some bomb-ass Elmo cupcakes (which I will post about later), andĀ to yin-yang balance out the sugar sitch, I made sure to have a healthy Elmo fruit tray, too!. The end result was hella cuteĀ and dee-lish!

What you’ll need:

  • 1 quart (2 pints) of strawberries
  • 1 pint of blueberries
  • 3 peeled Mandarin oranges
  • 2 cups non-dairy yogurt (soy/coconut, almond, etc.)
  • 1 Elmo cake pan (I got mine on amazon.com for ~$14, but you can use any type of platter)

Just arrange your fruit to look like Elmo. Feel free to use my pic as a guide. Enjoy!

What’s your favorite healthy vegan treat to whip upĀ for your kiddos?
