I’m sugar binging, weeeeeeee!!! The other night I HAD to have sugary sweet treats in my gullet STAT (will kick sugar as a Chinese new year’s resolution), so I whipped up a quick and easy batch of vegan chocolate chip cookies. They were hella dee-lish! Enjoy!
The Best Vegan Chocolate Chip Cookies
What you’ll need:
- 1/2 cup Earth Balance
- 1 cup vegan sugar (can also use brown sugar, coconut sugar, Xylitol, etc.)
- 1 tsp cornstarch
- 1/2 tsp baking powder
- 3 TBSP water
- 1 cup + 2 TBSP all-purpose flour
- 1 cup vegan chocolate chips
Preheat oven to 375ºF. Mix Earth Balance and sugar together until blended well. In a separate bowl, mix the cornstarch, baking powder, and water. Combine the sugar/butter with the cornstarch/baking powder. Stir in the flour and chocolate chips. Bake for ~10 minutes or until the cookies turn lightly brown.
