Healthy Pumpkin Chia Pudding

If y’all have tons of canned pumpkin lying around your kitchen like I do (post holiday stash), put it to good use in a healthy and delicious wintery pudding treat! I came across  a pumpkin chia pudding recipe in The Complete Idiot’s Guide to Low-Fat Vegan Cooking, and I instantly fell in love! It’s super quick and easy to whip up, and it’s hella yum.

Pumpkin Chia Pudding

What you’ll need:

  • 1 cup cooked pumpkin purée
  • 1/3 cup chia seeds
  • 1.5 cup almond milk
  • 1/4 cup maple syrup
  • 2 tsp. pumpkin pie spice
  • 1 tsp. vanilla extract

Just mix everything up in a high-speed blender, refrigerate for 30 minutes, and then serve. I sprinkled some nuts, seeds, and a little bit of cinnamon on top for garnish. Enjoy!

yields 3 cups of pudding
