Yummy & Simple Vegan Sugar Cookie Recipe

Here’s a little known fact about me… I’m a cookie MONSTER! Seriously, if you see me nomming on cookies, back the f*ck away, ’cause I ain’t sharin’. 😉

My fave cookies to bake are sugar cookies because they are suuuuuper simple, quick to whip up, and you can make them into HELLA cute shapes! *meow*

Bomb-Ass Simple Vegan Sugar Cookies

Ingredients:

  • 1-1/3 cups and 1 tablespoon all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 cup softened Earth Balance (vegan margarine)
  • 3/4 cup vegan sugar
  • Ener-G Egg Replacer equivilent to 1/2 egg
  • 1/2 teaspoon vanilla extract

Directions:

Preheat oven to 375 degrees. Mix your Egg Replacer and set aside. Mix flour, baking soda, and baking powder in separate bowl and set aside.

In a large bowl, mix your Earth Balance margarine and sugar until smooth. Add in the Egg Replacer. Gradually blend in the dry ingredients. Roll out your dough (don’t forget to cover your rolling pin with flour), and then go to town with your favorite cookie cutters! Place cookies onto ungreased cookie sheets, and sprinkle them lightly with some sugar. Bake for 8 to 10 minutes or until golden. Let cookies cool and then EAT!

Makes 2 dozen cookies.
