‘Eat to Live Cookbook’ Review

I’ve decided I’m NOT waiting until 2014 to resolve to get fitter, healthier, and acquire walnut-crushing butt cheeks (that’ll be another post). In an effort to jumpstart this healthier new me, I recently got my hands on a copy of Joel Fuhrman, M.D.’s Eat to Live Cookbook: 200 Delicious Nutrient-Rich Recipes for Fast and Sustained Weight Loss, Reversing Disease, and Lifelong Health.  Here’s a quick recap of what’s inside:

The diet emphasizes healthy vegan foods (lots of raw veggies, leafy greens, beans, sprouts, fresh fruits, nuts, seeds, etc.) and discourages animals foods, dairy, processed foods, fried foods, booze, caffeine, salt, sugar, and added fats.

Examples of dishes/recipes in this book:

  • Polenta Frittata
  • Blueberry Nut Oatmeal
  • Too Busy to Cook Vegetable Bean Soup
  • Jamaican Jerk Vegetable Salad
  • Eggplant Cannelloni with Pine Nut Romesco Sauce
  • Coconut Carrot Cream Pie
  • Chocolate Cherry Ice Cream

What I LOVE about this book:

  • It promotes a vegan diet.
  • There are lots of graphs, charts, and lists in the beginning of the book to help break down food facts & nutrition. 
  • The recipes are easy to follow and nutrient-rich.
  • Nutritional information is listed for every single recipe.

Mini gripes:

I wish the book had pics for every single recipe (there’s a nice selection of colorful photos of several dishes in the middle of the book, but that’s it). Also, I wish this book took a 100%  vegan stance. There’s a little give as far as meat and dairy intake goes. It’s not recommend, but it’s acknowledged.

Take away: 

This book is amazing, and I would recommend it to friends and family seeking to improve their eating habits. There’s no greater gift than the gift of health, so this book is definitely worth sharing!

    I saw this at the grocery store the other day and I almost purchased it! It was pretty expensive, and it didn’t say anywhere that it was strictly plant based recipes (that I saw anyway), so I passed. I’m glad to know that it is, and I’ll definitely look into getting it! Thanks for the info :)
