In case you’ve never heard of Sun Flour Baking Company before (have you been hiding under a bowl of tofu? *wink*), they make some of the most delumptious cookies in the universe! They make fruit juice-sweetened vegan cookies with organic ingredients and they also have wheat and gluten free cookies too! You can find their cookies at Whole Foods but if you don’t have a Whole Foods in your neighborhood, you can buy direct from their website.
The fabulous cookie baking extraordinaire Rey Ortega of Sun flour Baking Company sent me some boxes of these fabulous vegan, gluten-free cookies to try, and let me just say I was in cookie heaven! He sent me the following cookies to try: Lemon Shortbread, Vanilla Shortbread, Peanut Butter Shortbread, Premium Cinnamon Cookies and Premium Brownie Babies.
The good new for you guys is that I only got around to trying 3 boxes: Peanut Butter Shortbread (which was my favorite – I scarfed down that box like 2012 was tomorrow), Lemon Shortbread and Premium Cinnamon – YUMZ!
These cookies are so delicious that you simply have to try them all! Seriously, I can’t remember the last time I had a shortbread cookie since I’ve been vegan. It’s been about 10 years so this was a real treat.

Shortbread is my favorite! My grandma has a classic family recipe that was featured in the Better Homes & Garden’s cookbook by survivors of breast cancer…I’d sure love to see how these vegan cookies compare!

Okay, I will admit it.. I suck at baking. While I can handle vegan brownies, cakes and pies without too much effort, cookies are still a weak point of mine.
